Salade Niçoise (serves 2-3, 210 or
140 calories per serving)
The addition of tuna and mixed beans to a salad makes it instantly more filling and satisfying; the red pepper and tomatoes add
colour to make it look more appetising.
1/2 Red pepper, thinly sliced or cut into chunks
Tin of tuna in brine
Tin of mixed beans in water
Lettuce or mixed leaf salad
Drain the tuna and beans. Toss the ingredients together and serve as a meal or store in Tupperware for a packed lunch! You could
add a low-fat vinaigrette salad dressing if desired.
Ploughman's Lunch (portion, approx. 382
calories per serving)
1 part-bake baton (mini french bread)
25g half fat Double Gloucester cheese
Mixed leaf salad
Cherry tomatoes, whole or cut in half
Sliced red pepper
3 teaspoons branston pickle
Garlic Pitta Bread with Roasted Peppers
Rice Cakes or Snack-a-Jacks
Rice cakes or cheddar cheese flavour giant Snack-a-Jacks can be accessorised with a variety of toppings for a low-calorie light
lunch. Add a spreading of light Philadelphia or houmus and top off with roasted red and orange pepper.
